Before you do the following, make sure you clean the meat, and cut any unwanted fat off the meat. This goes with out saying, but have your smoker ready as well. Then make a bed of aluminum foil for the meat to lay on, proceed by seasoning the back strap with any seasons that you wish to have on the meat. Next, wrap the meat. You can do it like we did here, or you can do it in your own way. Last, put the meat on the smoker. Not seen in the video, puncture the foil so that smoke can get inside the wrap and begin to cook it. About 5 hours later, open up the foil allowing less heat more smoke. The whole process takes around 10 hours.
